Spanish lasagna

Spanish nouns have a gender, which is either feminine (like la mujer or la luna ) or masculine (like el hombre or el sol). F) Julia made a vegetarian lasagna with eggplant and spinach. In a skillet cook ground beef, celery, onions and garlic until meat is browned and vegetables are tender.


Drain off the fat from skillet. Stir in basil, oregano, salt, ½ tsp pepper and Italian herb seasoning.

Using a sharp knife cut both ends off the plantain. This will make it easy to grab the skin of the plantains. To assemble lasagna , arrange layer of plantains in baking dish.


Top with half of the beef mixture. Continue layering, starting with plantains and ending with cheese. Pour beaten eggs evenly over top.


You will need to make a sofrito as a base for the ground beef.

Peel the plantains like you would a banana, then slice each into into 4-slices lengthwise. Add about inch of oil into a frying pan and heat it on medium heat.

Lasagna is such a comfort food. Instea it’s vegetarian with lots of fresh spinach, mushrooms, a light tomato sauce and cheese. This is my favorite lasagna recipe. For the Spinach: Heat olive oil and butter in a large saucepan over medium heat until melted. Add shallots and garlic, season with salt and pepper, and cook, stirring frequently, until softened and fragrant, about minute. Add a few large handfuls of spinach and cook, stirring, until wilted.


This white chicken and spinach lasagna was at first an experiment that had my family feeling a bit uneasy and skeptical since they had recently suffered through a 2-week bout of new recipes each night, but it turned into an epic summer of eating this many, many times.
