Fill a large bowl with warm water and a couple tablespoons sea salt. Add the chicken breast tenderloins (making sure the water covers them). Set aside to brine for at least minutes. Meanwhile, preheat the oven to 4degrees F (2degrees C).
Line a baking sheet with foil (greased lightly) or parchment paper.
Line two rimmed baking pans with aluminum foil and top with metal rack. In large plastic zipper bag, dump in all the herbs and spices. Close bag and shake to blend. In a small mixing bowl, whisk maple syrup, Dijon mustar salt, and pepper together. Wrap bacon slice around each chicken strip and place them in the skillet, loose end down.
