Spanish rice recipe

Directions Heat oil in a large, heavy skillet over medium heat. Mix rice into skillet, stirring often. When rice begins to brown, stir in chicken broth and salsa. Reduce heat, cover and simmer minutes, until liquid has been absorbed.


In a saucepan over medium heat, melt butter. Add rice and stir until browned.

Remove bay leaf before serving. Add the rice and stir it so that the rice is lightly coated with the oil. Cook on medium high heat, stirring often, until much of the rice has browned.
